In September 2021 we started a new recipe series, In The Kitchen: Family Recipes, on our Facebook page. Every week we are sharing a recipe from my mother’s recipe tin!
In addition to the live baking video, we will share the recipes here on the blog as well.

Chocolate Drop Cookies

These were the cookies we almost always had in the cookie jar growing up. So simple and easy to make. You could definitely add some chocolate chips, sprinkles or nuts to these to fancy them up. I like them just the way they area

Ingredients

  • 1/2 cup Butter (at room temp)
  • 1 cup Sugar
  • 2 Tbsp Milk
  • 1 Egg
  • 1tsp Vanilla Extract
  • 2 cups Flour (All Purpose)
  • 4 tsp Cocoa Powder
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Nuts (optional)

  1. Preheat your oven to 350°. Grease or line the baking sheet with parchment paper (or silicone mat).
  2. In large mixing bowl cream together butter and sugar until well combined.
  3. Stir in milk and egg. Mix well.
  4. Sift flour into a medium mixing bowl. Add cocoa powder, baking powder and salt.
  5. Add dry ingredients to the butter mixture until well combined.
  6. Scoop by spoonfuls onto the lined baking sheet.
  7. Bake for 12 to 15 minutes.

Cinnamon Biscuits

Ingredients

  • 2 Tbsp Sugar
  • 2 Cups Flour, sifted
  • 4 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 Cup Shortening
  • 1 Egg
  • 1/2 Cup Milk
  • 1/2 Cup Brown Sugar
  • 1 Tbsp Cinnamon

  1. Preheat oven to 375° and grease 9×9 pan.
  2. Combine dry ingredients in a large bowl.
  3. Cut in shortening with a pastry cutter or fork.
  4. The mixture will be lumpy. Make a well in the center and add eggs and milk.
  5. Stir to combine and make a firm but slightly sticky dough.
  6. Knead in a bowl or on a flat surface 4 or 5 times to make sure the dough is well formed.
  7. Roll out into a rectangle and to desired thickness (1/4 to 1/2 inch).
  8. In a small bowl, combine brown sugar and cinnamon.
  9. Spread sugar mixture over dough, leaving about 3/4 to 1 inch bare on one long side of the rectangle.
  10. Roll up loosely at first to keep the sugar mixture inside Roll. Once you reach the side with bare dough, fold it over and pinch a little to hold it together.
  11. Use a sharp knife or dental floss to cut the log into 1-inch portions and place it in a baking pan.
  12. Bake at 375° for 30 minutes remove from the oven, let cool and enjoy!

Fudgy Squares

These sweet, crunchy and gooey little squares make me think of my dad. These were known in our house as “dad’s squares”. I asked my mother recently why I remember them that way. She said my father was not a big sweets eater, but he liked these.

This fudgy square was also always around anytime we had company visiting. I had not made them until doing this series, and they are much easier than I would have imagined!

Ingredients

  • 1 1/2 cups Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Sugar
  • 1/2 cup Butter
  • 2 Egg Whites
  • 1 cup Brown Sugar
  • 1/4 cup Walnuts, chopped

  1. Grease 8×8 pan and preheat oven to 325°.
  2. Sift flour, baking powder and salt together in a bowl.
  3. Add sugar to the flour mixture.
  4. Cut in margarine until the mixture is crumbly.
  5. Press into an 8×8 pan. Set aside.
  6. In a small bowl, whisk 2 egg whites until just starting to get frothy.
  7. Add brown sugar and walnuts and stir to combine.
  8. Pour and spread over the top of the flour base.
  9. Bake for 20 to 25 minutes until browned.
  10. Let cool for about 20 minutes. Cut in squares and enjoy!

Banana Bread

This family recipe is my Aunt Diane’s Banana Bread. This banana bread can have Chocolate chips added as well. We almost always add the chocolate chips! Best served, sliced and buttered.

Ingredients:

  • 2 Bananas
  • 1 tsp Baking Soda
  • 1/2 cup Margarine (melted)
  • 1 cup Sugar
  • 2 Eggs, beaten
  • 2 1/2 cups Flour
  • 1/2 tsp Salt
  • 1 tsp Baking Powder
  • 1/2 cup Milk
  • 1 Cup Chocolate Chips (Optional)
  1. Preheat the oven to 350° and grease a large loaf pan.
  2. In a large bowl, mash the bananas and add the baking soda, margarine, sugar and eggs. Set aside.
  3. In a medium bowl, mix together the flour, salt, and baking powder.
  4. Add milk to the wet mixture, and then stir into flour to combine. You will have a semi-thick batter.
  5. Add Chocolate Chips if desired, and stir to combine.
  6. Scoop batter into the prepared loaf pan. Bake in the oven for 1 hour.
